Michelin starred chef, Mathieu Pacaud (l'Ambroisie, Divellec et Apicius) compiled the menu, which is intentionally limited to a small number of absolute classic gastronomic French dishes, the list divides turf and surf with the most amazing creations. At 25 years of age, young chef Edouard Chouteau holds up the standards perfectly creating in-house micro-cuisine. Having previously worked at le Bristol and l’Arpège, he has spent 4 years working under the auspices of chef Pierre Gagnaire.
